Christophe were explaining us in his kitchen that if we had mustard on hot red cabbage there is a perfect balance between sourness of the mustard and sweetness of the Red cabbage. The challenge was to make this dish but to create a total different experience. That’s the reason why he worked on temperature and texture and the result is went beyond the expectations.
Christophe has an innovative mind in the kitchen, making a Parmesan made from spaghetti, a Potato and Black Truffle Cappucino or even a Strawberry and Olive Soup with a Basil Ice Cream.
