Help on a vegetarian meal?

I’m a teenage girl and i’m making dinner tomorrow for the fam.
i don’t live in a place where the best ingredients are found, as in super fresh ahi tuna.
the meal has to be healthy and meat-free.
here’s my ideas so far (all taken from jamie oliver cookbooks)
Appetizer: fresh tomato/basil soup
Drink: mango lassi (i know it doesn’t exactly fit, but we love them and i found a good recipe and the mangos are finally tasting good here)
Main Dish: some sort of pasta, i’ve narrowed it down to 3: pasta carbonara, a pasta with mussels, or a pasta w/ artichoke
Side dish: NEED HELP HERE, what goes with pasta?
Dessert: NEED HELP HERE, something healthy! not necessarily fruit
